椰子麥片餅乾 Coconut Oatmeal Cookies

今年到我哥哥家裏吃聖誕大餐,甜點當然是我負責的啦,聖誕節吃聖誕餅乾是傳統之一,所以我決定做餅乾。我做餅乾的原則是好吃第一、賣相第二、健康第三,要做出來好喫好看又不是糖和奶油多的嚇死人的餅乾,真的不容易,所以我不常做餅乾。這次還要再加上一個挑戰,gluten free。所以這次找到的食譜很神奇,真的好喫好看也比普通的餅乾健康一點,而且材料都是我家裏現場有的,全壘打餅乾啊!

這一款餅乾有著濃濃的椰子香味,鬆軟耐嚼的中心,吃完了齒唇間留著淡淡的椰子香。餅乾中加的麥片使它有點厚度支架,而不是一咬就化散掉的餅乾類型。每塊餅乾淋上一點融化的黑巧克力,好看而且讓味道更多層次一點。濃鬱微苦的巧克力跟清香的椰子應該是味覺的兩端,但是一起吃的味道,又特別的搭配,好吃又好看,兩贏。

我做的版本比較薄一點,喜歡多點嚼勁的餅乾的話可以做厚一點的餅乾。如果喜歡甜味中帶一丁點咸,可以在餅乾上加一點點海鹽,讓味道再多一層變化。

我的食譜糖少了點,所以材料拌好后需要用手指輕壓成型,不過不要壓的緊密,不然烤出來的餅乾會太實硬,要讓餅乾團鬆鬆的稍微成型就好了,才能烤出鬆軟耐嚼的餅乾。

Makes 15 cookies; adopted from Coconut Lover’s Oatmeal Cookies
[ingredients]

  • 1 cup sweetened shredded coconut
  • 1/3 cup melted coconut oil or canola oil
  • 1/3 cup loosely packed light brown sugar
  • 1 egg
  • 1 1/3 cup old fashioned oats
  • 1 oz melted dark chocolate

[directions]

  1. Preheat oven to 325F.
  2. Mix together oil, brown sugar and egg until smooth. Stir in the oats then the shredded coconut.
  3. Scoop balls of dough onto lined or lightly greased cookie sheet. The batter will be quite loose so form it with your fingers.
  4. Bake for 12 minutes then sprinkle on a little sea salt and drizzle on melted dark chocolate.
